Makes 1 pitcher (approx 4 – 8 glasses depending on size of glass)
- 3/4 cup sugar plus 3/4 cup water
- 1 cup fresh blackberries
- juice of 5 small limes for mojitos and 1 extra lime for sugaring rims of glass
- 1/2 cup roughly chopped/loosely packed fresh mint leaves (stems removed)
- 1 1/2 cups Bacardi Limon Rum
- 2 1/2 cups club soda
Place sugar and water in small sauce pan and stir with large wooden spoon. Heat over medium heat until dissolved, approximately 5 minutes. Set aside and let cool completely.
Place blackberries, lime juice, mint and rum in blender and pulse until well mixed and mint looks completely chopped. Let sit until sugar water has cooled. Add sugar water to blender and pulse. Add club soda and pulse. If you prefer, you can now drain out the seeds and mint by pouring over a sieve. I usually don’t.
To rim glasses with sugar; juice 1/2 lime on small plate. Pour small amount of colored sugar on another plate. Dip glasses in lime juice followed by sugar. They’re now ready to be poured, served, slurped and requested for more.
