During one hot and sticky day last month when I was wasting a good bit of time twittering with my tweeps, a question popped up asking everyone what they were baking for the weekend.  I thought to myself, “I ain’t baking Sh*t”..  I’ll put together this 2-ingredient cake and go out and have some fun.  God bless everyone that is baking pound cakes and bread from scratch on a Saturday afternoon. So when Bridges magazine asked me to come up with a summer recipe, I had to pull this one out of my bag of tricks. With friends like mine, you wouldn’t wanna be hanging out in the kitchen for hours either.

    I’m an Ohio guy, but I never ordered mint chocolate chip. My fave was always chocolate pecan. This looks OH so good that I’ll be ordering mint chocolate chip from now on. Something about the coolness of mint and the cold of the ice cream making a great combo. Just amazing that you can make it so simple, yet so incredibly good.

    You’ve one it again! I lovvvvvv this one. I used to do a similar mint chocolate chip pie with a hard chocolate fudge top! It was soooo easy. Get a pre made pie crust, add the ice cream and then top it with instant hardening chocolate! Yummm. Your recipe reminded me for it! I’ll have to try yours out! :)
